BOLOGNESE ZOODLES

I have recently found out that I have SIBO! After reading the very restricted and uninspiring diet plan, I was determined to come up with some tasty recipes so I can still enjoy food while letting my gut heal. This soup is the first instalment of many more recipes for my SIBO fam to keep us all motivated!

INGREDIENTS

  • 500 grams of organic beef mince
  • 4x zuchinnis
  • 2x carrots
  • 1/2 cup of fresh basil
  • 1/2 cup of spring onion
  • 2x 400g tin of diced tomatoes
  • 1-2 bayleaves
  • 1x tsp of chilli powder
  • 1x tsp of garlic oil
  • 50g of butter (optional but it makes it taste richer)
  • Sea salt and pepper

METHOD

  • Dice the carrots and roughly chop the spring onion and basil
  • Heat frypan to medium and pour in garlic oil
  • Add the mince and cook until brown
  • Take the mince out of the pan and put in a bowl to the side
  • Put the carrot into the same pan on medium heat and cook until just soft
  • Add the tinned tomatoes, oregano, bayleaf and chilli. Stir through and then add mince back in
  • Once all combined, turn heat down to low and simmer for 5 mins
  • Add the spring onion, basil and butter. Mix through and then turn off heat
  • Grab yourself a peeler and peel strips off the zucchini the whole way around until you hit the soft centre
  • Put the zucchini ribbons into a microwave safe bowl. Cover and heat in microwave for 2 mins
  • To serve, use tongs to place a portion of the zucchini ribbons into a bowl and add as much bolognese sauce as you like!

NOTES

  • Tasty cheese or parmesan grated on top is the perfect way to finish off this dish! (low fodmap option but not quite SIBO friendly)
  • If you do have a “spiraliser” I would absolutely use that to make your zoodles
  • If you are time poor, you can buy the pre-prepared zoodles from woolworths in the fruit and veg section near the packaged salads. I often go for this option!
