GUACAMOLE WITH VEGGIE STICKS

There is something very “palm springs in the 70’s” about the way I have presented this dish but I kind of like it. Still yet to meet anyone who isn’t a fan of the humble avocado so why not try out my version of guac next time you’re entertaining?

INGREDIENTS

  • 3 x Ripe avocados
  • 1 x Lime
  • 1/4 cup of spring onion
  • 1/4 cup of coriander
  • 1/2 a Long green chilli
  • TBS of greek yoghurt or sour cream (optional)
  • Salt flakes and pepper to taste

METHOD

  • Firstly cut the avocado down the middle, remove the seed and skin then put in a large bowl. Repeat with the other two
  • Using a fork, muss up the avocados until desired guacamole texture (I like mine quite chunky)
  • In a food processor, add the spring onion, coriander and green chilli and pulse until it’s quite smooth but not a paste
  • Add the green mixture to the avocados and stir until it is all combined
  • Cut the lime and squeeze all of its juice into the bowl
  • If you like a slightly creamier guac, add the greek yoghurt/sour cream and stir once more
  • Sprinkle in your salt flakes and cracked pepper to taste

NOTES

  • You don’t have to use the food processor for this recipe, you can just finely dice the spring onion, coriander and chilli. I just find the processor is faster and brings out a more intense flavour from the ingredients.
