NUT-FREE BASIL PESTO

Traditional pesto is one of those things that I know I would really enjoy but it always has some form of nuts in it. Every time I have accidentally eaten it, I’ve almost felt the reaction was worth it! (not really). Anyway I had a play around with nut-free alternative for you guys and I hope you enjoy it as much as I do.

INGREDIENTS

  • A whole bunch of basil (roughly 2 cups)
  • 1/4 Cup of grated parmesan cheese
  • 1/4 Cup of sunflower seeds
  • 1/2 a lemon
  • 3 TBS of extra virgin olive oil
  • Splash of garlic infused oil
  • Pepper and sea salt to taste

METHOD

  • Put the sunflower seeds in a dry frypan on medium heat and stir them until they a lightly toasted (only a couple of minutes). Remove from heat
  • Place all ingredients into a food processor and pulse until all ingredients are combined and the texture is relatively smooth

NOTES

  • If you’re finding the pesto is not combining but rather getting stuck on the sides of the food processor you can add one TBS of water to loosen it up or an additional TBS of oil
  • This pesto is so versatile, I often put it on top of some spelt pasta for dinner or on top of a chicken breast with some melted cheese
