OLIVE TAPENADE

Aaaand another sign of my olive obsession emerges. Wanted to try something different to add to the antipasto platter rotation so I came up with this super quick recipe. This tapenade is the perfect combination of salty and tangy, you will want to lather it on everything!

INGREDIENTS

  • 1 Cup of pitted kalamata olives
  • 1 TBS of capers
  • 2 TBS of Extra virgin olive oil
  • 1 TSP of garlic infused oil
  • I TBS of chopped basil

METHOD

  • Place all ingredients in a food processor
  • Pulse until it is a paste
  • Enjoy

NOTES

  • You can replace basil with any of your favourite herbs. Parsley is another good choice
  • Any olive varieties can be substituted into this recipe instead of kalamatas just use the same quantity
  • If the flavour is a bit too salty for you, try adding some lemon juice to balance it out

SERVE AS PART OF AN ANTIPASTO PLATTER OR ON TOAST WITH ROASTED TOMATOES AND GOATS CHEESE
